Lightly treaded by foot and then whole-cluster pressed. Fermented to dryness at cool temperatures and matured on the lees in concrete (65%) and stainless steel (35%). Pale salmon hue with aromas of fresh strawberry, peach, white rose and wet stone. Crisp, fresh and dry with mouthwatering acidity.

Started in 2011 by two mountaineering couples inspired to revive ancestral vines    CS produces from 80 year old vines of Moscatel, Moscatel Negro, Bonarda, and Criolla Chica. Parral trained vines - a ceiling-trellised system that provides shade and maximizes airflow sits alongside the Los Patos River on stony soil at 5k’ above sea level.  Minimal intervention and saignée method where a portion of red wine juice is “bled” off during the early stages of fermentation making a deep colored slightly more textural rose.
