MEET PRIMITIVO

Argentine Fire Cooking

Stoneburner welcomes PRIMITIVO — rooted in the fire-cooking traditions of Argentina. Alex & Liliana are the duo behind PRIMITIVO. They plan to host their first pop-up on June 22nd, with hopes that it may eventually evolve into a brick-and-mortar experience.

Liliana Edwards, a concept developer and interior designer whose career spans New York City, Seattle, and Park City. The founder of Restaurant & Bar Design Group, Liliana has spent sixteen years shaping hospitality spaces in some of our favorite cities.

Executing the food is Alex Gonzalez, a Chicago-born chef who has spent fourteen years cooking at Michelin-starred and Bib Gourmand restaurants before making Seattle home in 2022. His food lives at the intersection of playful and focused — nostalgic flavor pairings lifted by technique, familiar at the core and surprising at the edges. He currently runs his own pop-up, Sandwich Saga, out of the Black Cat in Seattle. If you get a chance, stop by there as well.

Alex and Liliana met in 2024, bonded over a shared love of food and hospitality, and built PRIMITIVO from there. The result is a market-driven dining format designed to put guests in control: choose your cuts and build your plate. Argentine steak cuts cooked over fire, seasonal vegetables, empanadas, and a few indulgent extras.

Beef Empanada Mendocina Flaky dough filled with chopped tenderloin, sweet onions, hard-boiled egg, and green olive

Provoleta Grilled provolone, served with bread
