On Wednesday, April 22nd from 6 to 9 pm, we're hosting an evening of amari flights, inventive cocktails, and aperitivo bites alongside the founders behind one of Seattle's most exciting small producers: Joey and Gillian Diedrick of SennzaFinne. Show up, drink well, and stay a while. Jason Stoneburner will be serving perfect bites alongside flights and cocktails, with the full menu available if needed (served until 9 pm).

About SennzaFinne

The name is Italian — pronounced senz-uh-fee-nay — and it means "without end." It's a fitting name for an amaro project built on the idea that amari, like Cascadia, is complex and never really stops evolving.

Hospitality industry vets, Joey and Gillian fell in love with amaro while traveling through Italy around the time of their engagement in 2013, and brought that energy back to the Seattle bar scene they'd both been a part of for years, serving and admiring the unique categories of Italian amari. Since 2019, they've been creating SennzaFinne, a Cascadia inspired, terroir-driven amari in Seattle.

Their ethos connects the Italian tradition of amaro with the Cascadia environment, focusing on natural cycles, deep processes, and creating drinks that feel alive and reflect the region. They use only organic and wild-harvested ingredients, extract at 190 proof in small pots, produce just 400 bottles at a time, never use additives, and bottle by hand.

Their lineup spans five expressions: Amaro No. 1 through No. 4 — each inspired by a season — and No. 5 "Always," their year-round flagship. Each bottle reflects the rhythm of the Pacific Northwest, from the first spring green to winter's quiet roots: small batches, limited releases — the season in a glass.

What to expect

Bar Manager Jack Chou has spent over six years building Stoneburner's bar program into one of Seattle's favorites. For one night during Seattle Cocktail Week, he's putting SennzaFinne front and center. Expect amari-forward cocktails alongside the SennzaFinne team, amari flights so you can taste the full lineup side by side, and aperitivo bites from Jason and the kitchen to keep the evening moving.

If you're visiting Seattle for Cocktail Week, this is the Ballard stop worth making (before late night). Stoneburner sits in the heart of historic Ballard Avenue — great neighborhood, great bar, and a great reason to linger, thanks to some of the best hospitality in the city.
