Cantillon Has Landed at Stoneburner—Here’s What to Try First
Belgian beer lovers, take note: Cantillon has arrived at Stoneburner.
We’re now pouring selections from Brasserie Cantillon, the last remaining lambic brewery in Brussels, known for its dedication to traditional spontaneous fermentation and complex, tart beers. These are limited, highly sought-after bottles, and we’re excited to feature them on rotation.
Current pours include:
Cantillon Classic Gueuze – A blend of one-, two-, and three-year-old lambics with tart citrus, funk, and a crisp, champagne-like finish.
Saint Lamvinus – A grape lambic made with whole Merlot and Cabernet Franc grapes, fermented in steel and finished with wine-like intensity.
Sang Bleu – A bold, ruby-colored lambic made with camerise berries (aka haskap). Expect jammy fruit, dusty funk, and a beautiful dry finish.
Each of these bottles offers something unique—complex acidity, layered aromatics, and incredible food pairing potential. We recommend enjoying them at 55°F to fully experience the nuance.
